A uva está entre as frutas com maior teor de compostos fenólicos, suas concentrações são determinantes para a qualidade do fruto, variando entre as diferentes porções das uvas, as quais conferem benefícios à saúde humana, associados à redução do risco de doenças crônicas. A produção desses metabólitos bioativos pelas videiras é influenciada por fatores relacionados ao terroir, o qual é dependente da interação entre o ambiente físico e biológico do local de cultivo, e das práticas vitícolas importantes para o desenvolvimento da planta e do fruto. O ecossistema agrícola é um ambiente de muitas inter-relações, em busca de sistemas que melhorem a qualidade de todo o processo, com programas aplicados na redução do uso de pesticidas. As parreiras são um ambiente passível para os ácaros fitófagos que são pragas de difícil gestão, pois desenvolvem resistência aos acaricidas e possuem alta fecundidade, estando entre eles o ácaro Panonychus ulmi (Koch) (Tetranychidae). O emprego de agentes biológicos, tais como do ácaro fitoseídeo Neoseiulus californicus (McGregor) (Phytoseiidae), um dos seus antagonistas, é uma alternativa para o controle destas pragas. Neste contexto, esse trabalho teve por objetivo avaliar comparativamente as características físico-químicas e o perfil dos compostos bioativos de uvas da varietal Merlot, ao longo do seu processo de maturação, mantidas em manejo convencional e sob controle biológico aplicado do P. ulmi por N. californicus, em uma mesma propriedade no município de Bento Gonçalves, Rio Grande do Sul, Brasil. Os tratamentos foram realizados em três áreas distintas do parreiral: área atacada com P. ulmi (AF), área com N. californicus controlando P. ulmi (AFP), e uma terceira área sem presença de ácaros (SA). Nas uvas foram determinados os teores de acidez, pH, açúcar, cor, textura, e os compostos bioativos, tais como fenóis totais, flavonoides, antocianinas, resveratrol, e antioxidantes. Em relação aos resultados de cor, as uvas das videiras dos tratamentos SA e AF apresentaram maior luminosidade e intensidade das cores vermelha e azul, comparadas aos frutos das videiras do tratamento AFP. O teor de açúcar das uvas foi semelhante entre os tratamentos no final da maturação. Na avaliação da textura, a deformação na dureza das uvas coletadas na primeira semana foi semelhante entre os frutos dos três tratamentos, porém no final do amadurecimento houve uma maior deformação nas uvas dos tratamentos AFP e SA na ponta de prova tipo cilindro. Os frutos de videiras com controle biológico apresentaram níveis maiores de acidez e pH, e uma concentração expressiva de todos os compostos bioativos. O resveratrol foi encontrado principalmente na casca das uvas mantidas em AFP ao longo do período de amadurecimento do fruto, com menor valor no tratamento AF, indicando as consequências do ataque de ácaros fitófagos nas plantas. Os resultados mostram que a aplicação do controle biológico é uma alternativa adequada, no qual a presença de ácaros predadores auxilia na qualidade dos frutos das videiras, aumentando a concentração de bioativos das uvas, e mantendo as mesmas características físico-químicas dos demais tratamentos.

The grape is among the fruits with the highest content of phenolic compounds, their quantity is determinant for the quality of the fruit, varying between the portions of the grapes, as they confer benefits to human health, are associated with the reduction of the risk of chronic diseases. The production of these bioactive metabolites by the vines is influenced by factors related to the crop, which is dependent on the interaction between the physical and biological environment of the local crop, and the vineyard important for the development of the plant and the fruit. The agricultural ecosystem is an environment of many interrelationships, in search of systems that improve the quality of the whole process, with programs to reduce the use of pesticides. The parasites are passive for phytotherapeutic mites that are conservation pests, since they develop resistance to acaricides and have high fecundity, among them the mite Panonychus ulmi (Koch) (Tetranychidae). The use of biological agents, such as the phytoseiid mite, Neoseiulus californicus (McGregor) (Phytoseiidae), is one of its antagonists, is an alternative for the control of these pests. This study, this study had to compare the physical-water-fatures characteristics and the profile of bioactive samples from grapes of Merlot varietal, the best-to-the-phase process of matuting conventional and under biological control applied from P. ulmi by N. californicus, in the same property in the municipality of Bento Gonçalves, Rio Grande do Sul, Brazil. The treatments were carried out in three distinct areas of the parreiral: area attacked with P. ulmi (AF), area with N. californicus controlling P. ulmi (AFP) and a third area without presence of mites (SA). The grapes were exposed to acidity, pH, sugar, color, texture, bioactive compounds, such as total phenols, flavonoids, anthocyanins, resveratrol and antioxidants. In relation to the results obtained, as the production of the vines of the SA and AF treatments, greater luminosity and intensity of the red and blue nuclei, compared to the fruit of the vines of the AFP treatment. In the evaluation of the texture, the deformation in the harvest of grapes collected in the first week was similar between the fruits of the three treatments, but at the end of the maturation of a larger quantity of grapes in the AFP and SA life units in the cylinder type probe. The fruits of vines control the larger groups of acidity and pH, and an expressive concentration of all the bioactive compounds. Resveratrol was found mainly in the mucosa of grapes maintained in AFP, with the advent of phytophagous plant mite attack. The results show that the application of biological control is an adequate alternative, without the presence of auxiliary predatory mites on the quality of the fruits of the vines, increasing the biomass concentration in the grapes, and remaining as physical characteristics.
